MANAGING FOOD ALLERGIES IN THE TULLY:
- The Tully is a nut-friendly facility meaning we do not serve any foods containing peanut or tree nut ingredients. However, some of our bakery items may be processed in a facility that also processes peanuts and tree nuts.
- Take caution with deep fried foods as our fryers come into contact with common food allergens.
- Upon request, dining staff will change gloves, use fresh utensils, and grab food from fresh pans in the back to reduce the risk of cross-contact.
- Direct any ingredient questions about items to the dietitian or manager on site. If you do not know who these individuals are, please ask the cashier or another employee on duty.
TRUE BALANCE:
Our True Balance station, located in the Tully Dining Commons is designed specifically for our guests who are allergic to one or more of the most common foods allergens. The meals at True Balance are free from the top 8 out of 9 allergens including eggs, milk, peanuts, tree nuts, shellfish, soy, sesame, and wheat (including gluten). Fin fish is offered periodically to increase protein variety.
We separate True Balance recipe ingredients from other menu items from the moment they arrive up until the dish is served. We prepare True Balance meals in a dedicated area and on designated equipment separate from all other stations. Unlike other stations that may be self-served, True Balance meals are always served by our trained staff on clean plates to reduce any risk of cross contact of allergens. True Balance is open for breakfast, lunch, and dinner 7 days a week.
For students with allergies outside of the top 8 or any other special dietary needs, please reach out to Campus Dietitian, Joanna for accommodations!
Peace of Mind Pantry:
The Peace of Mind Pantry is our campus allergen and gluten free “pantry” located at The Tully Dining Commons. The Pantry is stocked with a variety of gluten free and other allergy friendly options. This room can only be accessed by Stag Card swipe with students with documented allergies or those with Celiac Disease.

STUDENT RESPONSIBILITIES:
- Notify Campus Dietitian & Health Services of your allergy(ies)
- Fill out and submit all University Health and Allergy forms found at: www.fairfield.edu/foodallergies
- Schedule a meeting with the Campus Dietitian to discuss your dietary needs.
- Please provide updates if you have any issues at all during the year. If we do not hear from you, we believe that you are successfully navigating dining on campus.
- Carry your epipen and/or any other allergy medications with you at all times.
- In case of an allergy emergency, have you or someone nearby contact Public Safety at (203) 254-4090. All public safety vehicles are equipped with an epipen as well as the Tully, the Stag Snack Bar, and the Levee.
- Discuss your food allergy with your roommate. It is reasonable to ask your roommate to NOT bring allergens into your room.
- Reach out to the Office of Accessibility if you would like additional accommodations across campus.
